Ingredients:

  • 2 cups all-purpose flour (240g)
  • 1/2 tsp salt
  • 3/4 cup warm water (180ml)
  • 1 cup fresh spinach, chopped (30g)
  • 1/2 cup feta cheese, crumbled (75g)
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • 1/2 tsp ground black pepper
  • 1/2 tsp red pepper flakes (optional)
  • Fresh parsley, chopped, to taste
  • Extra flour for dusting
  • Olive oil or butter for cooking

Instructions:

  1. In a mixing bowl, stir together flour and salt.
  2. Gradually add warm water and mix until a dough forms.
  3. Knead for 5-7 minutes until smooth and elastic.
  4. Let the dough rest for 30 minutes covered with a damp cloth.
  5. In a skillet, heat olive oil over medium heat.
  6. Sauté the onion until translucent (around 3-4 minutes).
  7. Add spinach and cook until wilted. Remove from heat.
  8. Stir in feta cheese, black pepper, and red pepper flakes. Set aside.
  9. Divide the rested dough into 4 equal portions.
  10. Roll each portion into a circle about 1/8 inch thick, dusting with flour as needed.
  11. Place filling on one half of the rolled dough.
  12. Fold the other half over the filling and seal the edges by pressing down with a fork.
  13. Heat a skillet or griddle over medium-high heat.
  14. Brush with olive oil or butter. Place gözleme in the pan.
  15. Cook for 3-4 minutes per side until golden brown and crispy.
  16. Slice and serve immediately, optionally with a yogurt dip or side salad.
