Ingredients:
- 2 cups all-purpose flour (240g)
- 1/2 tsp salt
- 3/4 cup warm water (180ml)
- 1 cup fresh spinach, chopped (30g)
- 1/2 cup feta cheese, crumbled (75g)
- 1 small onion, finely chopped
- 1 tbsp olive oil
- 1/2 tsp ground black pepper
- 1/2 tsp red pepper flakes (optional)
- Fresh parsley, chopped, to taste
- Extra flour for dusting
- Olive oil or butter for cooking
Instructions:
- In a mixing bowl, stir together flour and salt.
- Gradually add warm water and mix until a dough forms.
- Knead for 5-7 minutes until smooth and elastic.
- Let the dough rest for 30 minutes covered with a damp cloth.
- In a skillet, heat olive oil over medium heat.
- Sauté the onion until translucent (around 3-4 minutes).
- Add spinach and cook until wilted. Remove from heat.
- Stir in feta cheese, black pepper, and red pepper flakes. Set aside.
- Divide the rested dough into 4 equal portions.
- Roll each portion into a circle about 1/8 inch thick, dusting with flour as needed.
- Place filling on one half of the rolled dough.
- Fold the other half over the filling and seal the edges by pressing down with a fork.
- Heat a skillet or griddle over medium-high heat.
- Brush with olive oil or butter. Place gözleme in the pan.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Slice and serve immediately, optionally with a yogurt dip or side salad.
