Ingredients:

  • 2 cups (300g) Granny Smith apples, peeled and finely diced
  • 2 tbsp (30g) unsalted butter
  • 1/4 cup (50g) light brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 1 tsp (5ml) lemon juice
  • 1/4 tsp (1g) salt
  • 1 sheet (approx. 250g) frozen puff pastry, thawed but chilled
  • 1 large egg (50g), beaten with 1 tsp water
  • 1 tbsp (8g) granulated sugar

Instructions:

  1. Place a skillet over medium heat and melt the unsalted butter.
  2. Stir in the diced Granny Smith apples, light brown sugar, ground cinnamon, lemon juice, and salt. Sauté for 5–7 minutes until the apples are tender and the mixture is syrupy. Remove from heat and let cool slightly.
  3. Unroll the chilled puff pastry on a lightly floured surface and divide the sheet into 8 equal squares using a pizza cutter or sharp knife.
  4. Spoon 1–2 tablespoons of the cooled apple mixture into the center of each square.
  5. Fold the pastry diagonally to create a triangle and use a fork to firmly crimp the edges, sealing the fruit inside.
  6. Brush the top of each turnover with the beaten egg wash and sprinkle with granulated sugar.
  7. Place turnovers on perforated parchment paper in the air fryer basket and cook at 400°F for 12 minutes until the pastry is mahogany-colored and flaky.
