Ingredients:

  • 300g Granny Smith apples, peeled and finely diced
  • 25g granulated sugar
  • 2g ground cinnamon
  • 15ml lemon juice
  • 15g unsalted butter
  • 490g frozen puff pastry, thawed
  • 1 large egg, beaten
  • 8g coarse sanding sugar
  • 120ml powdered sugar
  • 15ml milk

Instructions:

  1. Sauté the diced apples, sugar, cinnamon, lemon juice, and butter in a saucepan over medium heat. Cook for 5-7 minutes until the liquid turns into a thick, glossy glaze. Let this cool completely in the fridge.
  2. Cut the thawed puff pastry into 8 equal squares.
  3. Scoop 1.5 tablespoons of the chilled apple mixture into the center of each square.
  4. Fold the pastry diagonally to form a triangle. Press the edges down with a fork until they are sealed tight.
  5. Set the air fryer to 350°F (175°C). Place a piece of parchment paper in the bottom of the basket.
  6. Brush the top of each turnover with the beaten egg. Sprinkle the coarse sanding sugar over the top.
  7. Place the turnovers in the basket in a single layer. Do not let them touch, or the sides won't crisp up.
  8. Air fry for 10-12 minutes until the pastry has puffed and looks deep brown.
  9. Whisk the powdered sugar and milk together until smooth. Drizzle the glaze over the turnovers while they're still warm.
