Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch strips
- 1 cup (120g) all-purpose flour
- 1 teaspoon (5g) salt
- 1/2 teaspoon (2.5g) black pepper
- 1 teaspoon (5g) garlic powder
- 1/2 teaspoon (2.5g) paprika
- 1/4 teaspoon (1.25g) cayenne pepper (optional)
- 2 large eggs, beaten
- 1 cup (85g) panko breadcrumbs
- 1/4 cup (30g) grated Parmesan cheese (optional)
- Cooking spray (olive oil or avocado oil preferred)
Instructions:
- Cut chicken breasts into even-sized strips. Pat dry with paper towels.
- In the first dish, combine flour, salt, pepper, garlic powder, paprika, and cayenne pepper (if using). In the second dish, whisk the eggs. In the third dish, combine panko breadcrumbs and Parmesan cheese (if using).
- Dredge each chicken strip in the flour mixture, ensuring it's fully coated. Dip the floured chicken into the beaten eggs, allowing excess to drip off. Finally, coat the chicken in the panko breadcrumb mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
- Arrange the breaded chicken tenders in a single layer in the air fryer basket, ensuring they are not overcrowded. You may need to cook in batches. Spray the tops of the chicken tenders lightly with cooking spray.
- Air fry for 10-15 minutes, flipping halfway through, until the chicken is golden brown and cooked through. Check for an internal temperature of 165°F (74°C) using a meat thermometer.
- Remove the chicken tenders from the air fryer and serve hot with your favorite dipping sauces.
