Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) cubes
  • 1/2 cup (60g) all-purpose flour, plus extra for dredging
  • 1 teaspoon (5ml) garlic powder
  • 1 teaspoon (5ml) onion powder
  • 1/2 teaspoon (2.5ml) smoked paprika
  • 1/4 teaspoon (1.25ml) cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 2 large eggs, beaten
  • 1 cup (100g) panko breadcrumbs
  • Cooking spray (olive oil or avocado oil)

Instructions:

  1. Cut chicken breasts into even-sized cubes. Pat dry with paper towels.
  2. In a shallow dish, combine flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well.
  3. Place the seasoned flour in one dish, beaten eggs in a second dish, and panko breadcrumbs in a third dish.
  4. Dredge each chicken cube in the seasoned flour, then dip in the beaten egg, and finally coat thoroughly with panko breadcrumbs.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Lightly spray the air fryer basket with cooking spray. Arrange the breaded chicken in a single layer, being careful not to overcrowd. You may need to cook in batches.
  7. Cook for 10-12 minutes, then flip the chicken and cook for another 10-12 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
  8. Remove the chicken in air fryer from the air fryer and serve hot.
