Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) cubes
- 1/2 cup (60g) all-purpose flour, plus extra for dredging
- 1 teaspoon (5ml) garlic powder
- 1 teaspoon (5ml) onion powder
- 1/2 teaspoon (2.5ml) smoked paprika
- 1/4 teaspoon (1.25ml) cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- 2 large eggs, beaten
- 1 cup (100g) panko breadcrumbs
- Cooking spray (olive oil or avocado oil)
Instructions:
- Cut chicken breasts into even-sized cubes. Pat dry with paper towels.
- In a shallow dish, combine flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well.
- Place the seasoned flour in one dish, beaten eggs in a second dish, and panko breadcrumbs in a third dish.
- Dredge each chicken cube in the seasoned flour, then dip in the beaten egg, and finally coat thoroughly with panko breadcrumbs.
- Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
- Lightly spray the air fryer basket with cooking spray. Arrange the breaded chicken in a single layer, being careful not to overcrowd. You may need to cook in batches.
- Cook for 10-12 minutes, then flip the chicken and cook for another 10-12 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
- Remove the chicken in air fryer from the air fryer and serve hot.
