  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon (15ml) chopped fresh parsley
  • 1/2 teaspoon (2.5ml) salt
  • 1/4 teaspoon (1.25ml) black pepper

Instructions:

  1. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  2. Pat the scallops very dry with paper towels. This is crucial for a good sear.
  3. In a small bowl, whisk together olive oil, minced garlic, lemon juice, parsley, salt, and pepper.
  4. Place the scallops in the bowl with the marinade and toss gently to coat evenly.
  5. Arrange the scallops in a single layer in the air fryer basket, ensuring they are not overcrowded.
  6. Air fry for 6-8 minutes, or until the scallops are opaque and lightly browned on the outside, flipping halfway through. Check for an internal temperature of 145°F (63°C).
  7. Serve immediately, garnished with extra parsley and lemon wedges, if desired.
