- 1 pound (450g) large sea scallops, patted very dry
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 2 tablespoons (30ml) fresh lemon juice
- 1 tablespoon (15ml) chopped fresh parsley
- 1/2 teaspoon (2.5ml) salt
- 1/4 teaspoon (1.25ml) black pepper
Instructions:
- Preheat the air fryer to 400°F (200°C) for 5 minutes.
- Pat the scallops very dry with paper towels. This is crucial for a good sear.
- In a small bowl, whisk together olive oil, minced garlic, lemon juice, parsley, salt, and pepper.
- Place the scallops in the bowl with the marinade and toss gently to coat evenly.
- Arrange the scallops in a single layer in the air fryer basket, ensuring they are not overcrowded.
- Air fry for 6-8 minutes, or until the scallops are opaque and lightly browned on the outside, flipping halfway through. Check for an internal temperature of 145°F (63°C).
- Serve immediately, garnished with extra parsley and lemon wedges, if desired.
