Ingredients:

  • 1.5 pounds zucchini (about 2 medium), cut into ½-inch thick fries (approx. 680g)
  • ½ cup all-purpose flour (60g)
  • 1 teaspoon garlic powder (5g)
  • ½ teaspoon onion powder (2.5g)
  • ½ teaspoon paprika (2.5g)
  • ½ teaspoon salt (2.5g)
  • ¼ teaspoon black pepper (1.25g)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (50g)
  • ½ cup grated Parmesan cheese (50g)
  • 2 tablespoons olive oil (30ml)

Instructions:

  1. Wash and trim the zucchini. Cut into even-sized fries about ½-inch thick.
  2. In three separate shallow dishes, prepare the following: Dish 1: Combine flour, garlic powder, onion powder, paprika, salt, and pepper. Dish 2: Beat the eggs. Dish 3: Combine panko breadcrumbs and Parmesan cheese.
  3. Working in batches, dredge each zucchini fry in the flour mixture, then dip in the egg, and finally coat thoroughly in the panko-Parmesan mixture, pressing gently to adhere.
  4. Preheat the air fryer to 400°F (200°C). Arrange the breaded zucchini fries in a single layer in the air fryer basket, ensuring they are not overcrowded. You may need to cook in batches. Drizzle lightly with olive oil.
  5. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy. Check for doneness – they should be tender-crisp inside.
  6. Remove the fries from the air fryer and serve immediately with your favorite dipping sauce.
