Ingredients:

  • 1 cup (100g) almond powder
  • 1 cup (120g) all-purpose flour
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ teaspoon baking powder
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Sliced almonds or powdered sugar for dusting (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine almond powder, all-purpose flour, baking powder, and salt.
  4. In a separate bowl, beat the softened butter and granulated sugar until light and fluffy.
  5. Mix in the egg and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Use a spoon or cookie scoop to portion out the dough onto the prepared baking sheet, spacing them evenly.
  8. Top each cookie with a slice of almond if desired.
  9. Bake in the preheated oven for 12-15 minutes, until the edges are golden brown.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
