Ingredients:
- 1 cup (100g) almond powder
- 1 cup (120g) all-purpose flour
- ½ cup (113g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ½ teaspoon baking powder
- 1 large egg
- ½ teaspoon vanilla extract
- Pinch of salt
- Sliced almonds or powdered sugar for dusting (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a bowl, combine almond powder, all-purpose flour, baking powder, and salt.
- In a separate bowl, beat the softened butter and granulated sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Use a spoon or cookie scoop to portion out the dough onto the prepared baking sheet, spacing them evenly.
- Top each cookie with a slice of almond if desired.
- Bake in the preheated oven for 12-15 minutes, until the edges are golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
