Ingredients:
- 1/4 cup (40g) chia seeds
- 1 cup (240ml) unsweetened almond milk
- 1 tbsp (15ml) pure maple syrup
- 1/2 tsp (2.5ml) pure vanilla extract
- 1 pinch sea salt
Instructions:
- In a mixing bowl or directly inside glass jars, combine the almond milk, maple syrup, vanilla extract, and salt. Whisk until the sweetener is fully dissolved.
- Stir in the chia seeds until they are evenly distributed throughout the liquid.
- Let the mixture sit on the counter for about 5 to 10 minutes, then stir the mixture vigorously one more time to break up seed clumps.
- Seal the jars tightly and place them in the refrigerator to chill for 4 hours or overnight.
- Give the pudding one final stir before serving. If too thick, whisk in an extra splash of almond milk.
