Ingredients:

  • 1/4 cup (40g) chia seeds
  • 1 cup (240ml) unsweetened almond milk
  • 1 tbsp (15ml) pure maple syrup
  • 1/2 tsp (2.5ml) pure vanilla extract
  • 1 pinch sea salt

Instructions:

  1. In a mixing bowl or directly inside glass jars, combine the almond milk, maple syrup, vanilla extract, and salt. Whisk until the sweetener is fully dissolved.
  2. Stir in the chia seeds until they are evenly distributed throughout the liquid.
  3. Let the mixture sit on the counter for about 5 to 10 minutes, then stir the mixture vigorously one more time to break up seed clumps.
  4. Seal the jars tightly and place them in the refrigerator to chill for 4 hours or overnight.
  5. Give the pudding one final stir before serving. If too thick, whisk in an extra splash of almond milk.
