Ingredients:

  • 1 box (15.25 oz) spice cake mix
  • 3 large eggs
  • 1 cup sour cream
  • 1 can (21 oz) apple pie filling
  • 1/2 cup melted unsalted butter, cooled
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Generously grease a 10-12 cup Bundt pan with butter or non-stick spray, ensuring all crevices are covered. Optionally, dust with flour and tap out the excess.
  2. In a large bowl, combine the cake mix, eggs, sour cream, and melted butter. Use an electric mixer on medium speed for about 60 seconds until the batter is smooth and mahogany-colored; do not over-beat.
  3. Using a rubber spatula, gently fold in the apple pie filling. Stir slowly until the apples are evenly distributed throughout the batter.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
  5. Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
  6. Whisk together powdered sugar, milk, cinnamon, and vanilla until smooth. Drizzle the glaze over the cooled cake.
