Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 2 tsp (10g) ground cinnamon
  • 1/2 tsp (2g) ground nutmeg
  • 1/4 tsp (1g) ground cloves
  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (240ml) sour cream
  • 2 cups (300g) peeled and diced Granny Smith apples
  • 4 tbsp (56g) unsalted butter
  • 1/2 cup (100g) dark brown sugar, packed
  • 2 tbsp (30ml) heavy cream
  • 1/4 tsp (1g) salt

Instructions:

  1. Preheat oven to 325°F (165°C). Grease the Bundt pan with butter and dust with flour, tapping out the excess.
  2. Toss the diced apples with a pinch of cinnamon.
  3. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a large bowl, beat softened butter and granulated sugar until pale and fluffy (about 3 minutes).
  5. Add eggs one at a time, beating well after each addition, then stir in vanilla extract and sour cream until smooth.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined.
  7. Gently stir in the apple chunks until evenly distributed.
  8. Pour batter into the prepared pan and bake for 70 minutes or until a toothpick comes out clean.
  9. Prepare glaze by heating butter and brown sugar in a saucepan, then whisking in heavy cream and salt until glossy.
  10. Cool cake slightly, invert onto a wire rack, and pour the warm caramel glaze over the top.
