Ingredients:
- 4 cups (480g) all-purpose flour
- 1 packet (2 ¼ teaspoons) instant yeast
- ½ cup (100g) granulated sugar
- 1 teaspoon salt
- ½ cup (120ml) whole milk, warmed
- ½ cup (115g) unsalted butter, melted
- 2 large eggs
- 2 cups (about 300g) tart apples, peeled, cored, and diced
- ½ teaspoon ground cinnamon
- 2 tablespoons (25g) granulated sugar
- 8 oz (225g) cream cheese, softened
- 1/3 cup (40g) powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- In a bowl, combine flour, yeast, sugar, and salt.
- In a separate bowl, whisk warmed milk, melted butter, and eggs together.
- Gradually add wet ingredients to dry ingredients; mix until a dough forms.
- Knead the dough on a floured surface until smooth.
- Place the dough in a greased bowl, cover with a cloth, and let rise for 1 hour.
- In a medium bowl, mix diced apples, cinnamon, and sugar. Set aside.
- In a separate bowl, beat softened cream cheese with powdered sugar and vanilla until smooth. Set aside.
- Once the dough has risen, punch it down and roll it out on a floured surface to about ½-inch thickness.
- Cut dough into circles using a round cutter (3-4 inches wide).
- Place a tablespoon of creamy cheese filling in the center of each circle.
- Top with a spoonful of the apple filling.
- Fold edges of the circle to partially cover the filling, creating a pocket.
- Preheat the oven to 350°F (175°C).
- Place assembled kolaches on a parchment-lined baking sheet.
- Bake for 25-30 minutes or until golden brown on the edges.
- Allow kolaches to cool on a wire rack before serving.
