Ingredients:

  • 4 cups (480g) all-purpose flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • ½ cup (100g) granulated sugar
  • 1 teaspoon salt
  • ½ cup (120ml) whole milk, warmed
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs
  • 2 cups (about 300g) tart apples, peeled, cored, and diced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons (25g) granulated sugar
  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. In a bowl, combine flour, yeast, sugar, and salt.
  2. In a separate bowl, whisk warmed milk, melted butter, and eggs together.
  3. Gradually add wet ingredients to dry ingredients; mix until a dough forms.
  4. Knead the dough on a floured surface until smooth.
  5. Place the dough in a greased bowl, cover with a cloth, and let rise for 1 hour.
  6. In a medium bowl, mix diced apples, cinnamon, and sugar. Set aside.
  7. In a separate bowl, beat softened cream cheese with powdered sugar and vanilla until smooth. Set aside.
  8. Once the dough has risen, punch it down and roll it out on a floured surface to about ½-inch thickness.
  9. Cut dough into circles using a round cutter (3-4 inches wide).
  10. Place a tablespoon of creamy cheese filling in the center of each circle.
  11. Top with a spoonful of the apple filling.
  12. Fold edges of the circle to partially cover the filling, creating a pocket.
  13. Preheat the oven to 350°F (175°C).
  14. Place assembled kolaches on a parchment-lined baking sheet.
  15. Bake for 25-30 minutes or until golden brown on the edges.
  16. Allow kolaches to cool on a wire rack before serving.
