Ingredients:
- 2 cups (300g) Granny Smith apples, finely diced
- 2 tbsp (28g) unsalted butter
- 1 tsp (2g) ground cinnamon
- 1 tbsp (12g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) packed dark brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 cup (90g) rolled oats (old fashioned)
- 1 tsp (4g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
Instructions:
- Melt 2 tbsp butter in a skillet over medium-high heat.
- Toss in diced apples, 1 tsp cinnamon, and 1 tbsp sugar. Sauté for 3-5 minutes until the apples are tender-crisp and smelling nutty.
- Remove the apple mixture from heat and let cool slightly.
- In a large bowl, beat the softened butter and both sugars until light and fluffy (about 2 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the creamed butter mixture until just combined.
- Fold in the sautéed apple mixture.
- Scoop dough onto parchment-lined baking sheets and bake for 12 minutes or until edges are golden.
