Ingredients:

  • 2 cups (300g) Granny Smith apples, finely diced
  • 2 tbsp (28g) unsalted butter
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (12g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) packed dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 cup (90g) rolled oats (old fashioned)
  • 1 tsp (4g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Melt 2 tbsp butter in a skillet over medium-high heat.
  2. Toss in diced apples, 1 tsp cinnamon, and 1 tbsp sugar. Sauté for 3-5 minutes until the apples are tender-crisp and smelling nutty.
  3. Remove the apple mixture from heat and let cool slightly.
  4. In a large bowl, beat the softened butter and both sugars until light and fluffy (about 2 minutes).
  5. Beat in the egg and vanilla extract until fully incorporated.
  6. In a separate bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  7. Gradually mix the dry ingredients into the creamed butter mixture until just combined.
  8. Fold in the sautéed apple mixture.
  9. Scoop dough onto parchment-lined baking sheets and bake for 12 minutes or until edges are golden.
