Ingredients:

  • 2 cups all-purpose flour (240g)
  • 1/4 cup granulated sugar (50g)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, chilled and cubed (56g)
  • 1 large egg
  • 1/2 cup buttermilk (120ml)
  • 1 cup peeled and diced apples (about 1 large apple)
  • 1/2 cup granulated sugar (100g) for caramel sauce
  • 1/4 cup unsalted butter (56g) for caramel sauce
  • 1/4 cup heavy cream (60ml) for caramel sauce
  • 1/2 teaspoon vanilla extract for caramel sauce
  • Pinch of salt for caramel sauce

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together the egg and buttermilk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in diced apples gently until evenly distributed.
  6. Turn dough out onto a floured surface; knead gently until smooth.
  7. Pat the dough into a circle, about 1-inch thick.
  8. Cut the dough into wedges and place on a parchment-lined baking sheet.
  9. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown.
  10. In a saucepan over medium heat, melt sugar until it turns amber in color.
  11. Carefully add butter, stirring until melted.
  12. Gradually pour in heavy cream, stirring continuously until smooth. Remove from heat and stir in vanilla extract and salt.
  13. Allow scones to cool slightly, then drizzle with warm caramel sauce before serving.
