Ingredients:

  • 3 cups (450g) peeled and diced Granny Smith apples
  • 2 tbsp (28g) unsalted butter
  • 1/4 cup (50g) light brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1g) baking soda
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) coconut sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1/2 cup (120ml) Greek yogurt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Sauté the diced apples with 2 tbsp butter, brown sugar, 1 tsp cinnamon, and lemon juice over medium heat for 5–7 minutes until apples are tender and liquid is a thick glaze. Remove from heat and let cool completely.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and remaining cinnamon.
  3. In a large bowl, cream the softened butter and coconut sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla extract.
  4. Fold in the Greek yogurt until the mixture is smooth and velvety.
  5. Grease the Bundt pan thoroughly with butter and a dusting of flour.
  6. Spoon half of the batter into the bottom of the pan, spreading it evenly. Carefully distribute the cooled apple filling over the batter, leaving a small gap at the edges.
  7. Top with the remaining batter, smoothing the surface with a spatula.
  8. Bake at 350°F (175°C) for 50–60 minutes until the cake is set and golden brown.
  9. Allow the cake to cool in the pan for exactly 10 minutes before flipping onto a wire rack to cool completely.
