Ingredients:
- 2 cups (300g) peeled and diced Granny Smith apples
- 1/4 cup (50g) brown sugar
- 1 tbsp (15g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 2 tbsp (30g) unsalted butter
- 3 cups (360g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/2 tsp (3g) salt
- 1 cup (225g) unsalted butter, softened
- 1 1/2 cups (300g) granulated sugar
- 3 large eggs
- 1 tbsp (15ml) vanilla extract
- 1 cup (240ml) sour cream
- 4 tbsp (55g) unsalted butter
- 1/2 cup (100g) brown sugar
- 2 tbsp (30ml) heavy cream
Instructions:
- Sauté the diced apples and butter in a skillet over medium heat. Stir in the brown sugar, cinnamon, lemon juice, and cornstarch. Cook for 5–7 minutes until the apples are tender and the liquid has thickened into a glossy, syrupy coating. Remove from heat and let cool completely.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- In a separate large bowl, beat the softened butter and granulated sugar until pale and fluffy.
- Incorporate eggs one at a time, followed by the vanilla extract.
- Gradually stir in the dry ingredients, alternating with the sour cream, until just combined.
- Grease the Bundt pan thoroughly. Pour roughly one-third of the batter into the bottom of the pan.
- Spread half of the cooled apple filling evenly over the batter.
- Add another third of the batter, followed by the remaining apple filling, and finish by smoothing the last bit of batter on top.
- Bake at 350°F (175°C) for 50–60 minutes. Let the cake cool in the pan for 10 minutes before carefully inverting it onto a wire rack.
- Melt the butter, brown sugar, and heavy cream in a small saucepan over medium heat. Whisk constantly until the mixture bubbles and thickens slightly. Pour the warm glaze over the cooled cake.
