Ingredients:
- 2 cups (300g) peeled and diced Granny Smith apples
- 2 tbsp (42g) honey
- 2 tbsp (25g) brown sugar, packed
- 1 tsp (2.6g) ground cinnamon
- 1 tbsp (15ml) water
- 1 sheet (400g) frozen puff pastry, thawed
- 1 large egg, beaten
- 1 tbsp (12g) coarse sparkling sugar
Instructions:
- Place diced apples and water in a small pot. Cover and steam over medium heat for about 15 minutes until tender.
- In a mixing bowl, combine the softened apples, honey, brown sugar, and cinnamon. Stir until the mixture is glossy and the apples are well-coated. Let cool slightly.
- Preheat oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry sheet slightly to even it out, then cut into 8 equal squares (approx. 3-4 inches each).
- Place each square on a parchment-lined baking sheet and spoon 1-2 tablespoons of the apple cinnamon mixture into the center of each square, leaving a ½ inch border.
- Brush the exposed edges of the pastry with the beaten egg wash and sprinkle with coarse sparkling sugar.
- Bake for 15-20 minutes, or until the edges are mahogany-colored and the pastry has risen significantly.
