Ingredients:

  • 2 cups (300g) peeled and diced Granny Smith apples
  • 2 tbsp (42g) honey
  • 2 tbsp (25g) brown sugar, packed
  • 1 tsp (2.6g) ground cinnamon
  • 1 tbsp (15ml) water
  • 1 sheet (400g) frozen puff pastry, thawed
  • 1 large egg, beaten
  • 1 tbsp (12g) coarse sparkling sugar

Instructions:

  1. Place diced apples and water in a small pot. Cover and steam over medium heat for about 15 minutes until tender.
  2. In a mixing bowl, combine the softened apples, honey, brown sugar, and cinnamon. Stir until the mixture is glossy and the apples are well-coated. Let cool slightly.
  3. Preheat oven to 400°F (200°C).
  4. On a lightly floured surface, roll out the puff pastry sheet slightly to even it out, then cut into 8 equal squares (approx. 3-4 inches each).
  5. Place each square on a parchment-lined baking sheet and spoon 1-2 tablespoons of the apple cinnamon mixture into the center of each square, leaving a ½ inch border.
  6. Brush the exposed edges of the pastry with the beaten egg wash and sprinkle with coarse sparkling sugar.
  7. Bake for 15-20 minutes, or until the edges are mahogany-colored and the pastry has risen significantly.
