Ingredients:
- 3 medium (300g) Granny Smith apples, peeled and finely diced
- 3 tbsp (42g) unsalted butter
- 1/4 cup (50g) brown sugar
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1g) salt
- 1 sheet (250g) frozen puff pastry, thawed but chilled
- 1 large (50g) egg, beaten
- 1 tbsp (15g) granulated sugar
Instructions:
- Melt the butter in a skillet over medium heat.
- Add the diced apples, brown sugar, cinnamon, lemon juice, and salt to the skillet.
- Cook for 5–8 minutes, stirring occasionally, until the apples are tender and the liquid has reduced to a thick, velvety glaze.
- Remove the apple mixture from heat and let cool for 10 minutes to prevent the pastry from melting.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the chilled puff pastry sheet slightly on a lightly floured surface to even out the thickness.
- Using a knife or pizza cutter, slice the pastry sheet into 8 equal squares.
- Lightly score a smaller square inside each piece (about 1/2 inch from the edge), being careful not to cut all the way through.
- Place the squares on the baking sheet and spoon a generous amount of the apple mixture into the center of each square.
- Brush the outer borders with the beaten egg wash and sprinkle granulated sugar over the edges.
- Bake for 20–25 minutes until the edges are mahogany-colored and have risen significantly.
