Ingredients:

  • 1 sheet (255g) frozen puff pastry, thawed but chilled
  • 1 tbsp (14g) melted butter
  • 1 tbsp (15g) coarse sugar
  • 3 large (680g) Granny Smith apples, thinly sliced
  • 3 tbsp (36g) light brown sugar
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) fresh lemon juice
  • 2 tbsp (25g) apricot preserves
  • 1 tsp (5ml) hot water

Instructions:

  1. Preheat oven to 400°F (200°C). Roll out the puff pastry on parchment paper. Use a knife to lightly score a 1-inch border around the edge and prick the center area several times with a fork.
  2. Toss sliced apples with lemon juice, brown sugar, and cinnamon until evenly coated.
  3. Arrange apple slices within the scored border, overlapping them in tight, concentric circles or diagonal rows.
  4. Brush the outer border of the pastry with melted butter and sprinkle with coarse sugar.
  5. Bake for 20-25 minutes until the pastry edges are deep golden brown and the apples begin to caramelize.
  6. Heat apricot preserves and hot water in the microwave for 15 seconds, then brush the glaze over the hot apples.
