Ingredients:
- 1 cup Water (filtered recommended)
- 1 cup Granulated Sugar
- 4-6 medium sprigs Fresh Rosemary
Instructions:
- Gently rinse the rosemary sprigs. Optionally, lightly crush the needles with the flat side of a knife to help release oils.
- Add the water and granulated sugar to a medium saucepan.
- Heat the mixture over medium heat, stirring continuously until the sugar is completely dissolved and the liquid looks clear.
- Once dissolved, add the rosemary sprigs to the mixture. Bring the liquid to a very gentle simmer.
- Immediately reduce the heat to the lowest setting, or turn off the heat if your stove retains heat well. Allow the rosemary to steep for 5 to 10 minutes, depending on desired flavour intensity.
- Carefully remove and discard the rosemary sprigs using tongs. Do not squeeze the sprigs to avoid releasing bitterness.
- Allow the syrup to cool completely to room temperature.
- Pour the cooled syrup through a fine-mesh sieve into an airtight storage container and refrigerate.
