Ingredients:

  • 1 cup Water (filtered recommended)
  • 1 cup Granulated Sugar
  • 4-6 medium sprigs Fresh Rosemary

Instructions:

  1. Gently rinse the rosemary sprigs. Optionally, lightly crush the needles with the flat side of a knife to help release oils.
  2. Add the water and granulated sugar to a medium saucepan.
  3. Heat the mixture over medium heat, stirring continuously until the sugar is completely dissolved and the liquid looks clear.
  4. Once dissolved, add the rosemary sprigs to the mixture. Bring the liquid to a very gentle simmer.
  5. Immediately reduce the heat to the lowest setting, or turn off the heat if your stove retains heat well. Allow the rosemary to steep for 5 to 10 minutes, depending on desired flavour intensity.
  6. Carefully remove and discard the rosemary sprigs using tongs. Do not squeeze the sprigs to avoid releasing bitterness.
  7. Allow the syrup to cool completely to room temperature.
  8. Pour the cooled syrup through a fine-mesh sieve into an airtight storage container and refrigerate.
