Ingredients:
- 1 cup (225g) unsalted butter, browned and cooled
- 3/4 cup (150g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 1 large egg (approx. 50g)
- 2 tsp (10ml) pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) ground cinnamon
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 cups (150g) rolled oats (old fashioned)
- 1/2 cup (60g) chopped walnuts, lightly toasted
- 1/2 cup (80g) dried cranberries
Instructions:
- Melt butter in a skillet over medium heat, whisking constantly until it foams and turns a deep amber color. Immediately remove from heat and let cool to room temperature.
- Beat the cooled brown butter with both brown and granulated sugars until the mixture is pale and fluffy.
- Add the egg and vanilla extract, beating on medium speed until fully incorporated and smooth.
- In a separate bowl, whisk together flour, cinnamon, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients. Mix on low speed just until no streaks of flour remain.
- Using a spatula, gently fold in the rolled oats, toasted walnuts, and dried cranberries.
- Chill the dough in the refrigerator for 60 minutes to prevent excessive spreading.
- Preheat oven and bake for approximately 14 minutes until the edges are golden brown.
