Ingredients:

  • 2 and 3/4 cups (344g) all-purpose flour, spooned & leveled
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup (16 Tbsp; 226g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/3 cup (70g) packed light brown sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract

  • 1/2 cup (100g) granulated sugar
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground allspice
  • - Vanilla Frosting
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 2 cups (240g) confectioners sugar
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons (45ml) heavy cream or milk
  • Seeds scraped from half of a split vanilla bean
  • Pinch of salt

Instructions:

  1. When setting out to make these delicious cookies, remember to remove extra butter for frosting ahead of time.
  2. In a large bowl, whisk together flour, cream of tartar, baking soda, cinnamon, and salt.
  3. In a medium bowl, combine melted butter with granulated and brown sugars until smooth using a whisk.
  4. Whisk in the egg followed by the vanilla extract until fully combined.
  5. Gradually add wet ingredients to dry ingredients mixing with a large spoon or silicone spatula until just combined. The dough will be thick but slightly crumbly.
