Ingredients:

  • 1 cup cottage cheese (preferably low-fat or full-fat)
  • 2 large eggs
  • 1 cup shredded cheddar cheese (or any cheese of your choice)
  • 1/2 cup milk (whole or low-fat)
  • 1/2 cup chopped spinach (fresh or frozen, thawed and drained if frozen)
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano (or Italian seasoning)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease a medium-sized baking dish (8x8-inch) with cooking spray or olive oil. This will help prevent sticking.
  3. In a large mixing bowl, combine the cottage cheese, eggs, and milk. Whisk them together until well blended.
  4. To the wet mixture, add in chopped spinach, onion, minced garlic, salt, black pepper, and oregano. Stir until everything is evenly distributed.
  5. Gently fold in the shredded cheddar cheese into the mixture until combined.
  6. Pour the cottage cheese mixture into the prepared baking dish. Spread it out evenly with a spatula.
  7. If desired, sprinkle additional shredded cheese on top for an extra cheesy crust.
  8. Place the baking dish in the preheated oven and bake for about 30 minutes or until set in the center and lightly golden on top.
  9. Once done baking, remove from oven and let it cool for about five minutes before slicing. Garnish with fresh herbs if using.
