Ingredients:
- 1 cup cottage cheese (preferably low-fat or full-fat)
- 2 large eggs
- 1 cup shredded cheddar cheese (or any cheese of your choice)
- 1/2 cup milk (whole or low-fat)
- 1/2 cup chopped spinach (fresh or frozen, thawed and drained if frozen)
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano (or Italian seasoning)
Instructions:
- Preheat your oven to 375°F (190°C).
- Grease a medium-sized baking dish (8x8-inch) with cooking spray or olive oil. This will help prevent sticking.
- In a large mixing bowl, combine the cottage cheese, eggs, and milk. Whisk them together until well blended.
- To the wet mixture, add in chopped spinach, onion, minced garlic, salt, black pepper, and oregano. Stir until everything is evenly distributed.
- Gently fold in the shredded cheddar cheese into the mixture until combined.
- Pour the cottage cheese mixture into the prepared baking dish. Spread it out evenly with a spatula.
- If desired, sprinkle additional shredded cheese on top for an extra cheesy crust.
- Place the baking dish in the preheated oven and bake for about 30 minutes or until set in the center and lightly golden on top.
- Once done baking, remove from oven and let it cool for about five minutes before slicing. Garnish with fresh herbs if using.
