- 2 large eggs
- Cooking spray or olive oil (for greasing)
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a mixing bowl, season the chicken pieces with garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
- In another bowl, combine breadcrumbs, grated Parmesan cheese, and dried Italian herbs.
- In a separate shallow dish, beat the eggs until fully combined.
- Dip each piece of seasoned chicken into the egg wash. Next, roll it in the breadcrumb mixture until fully covered. Place coated chicken bites on the prepared baking sheet.
- Spray the top of the chicken bites lightly with cooking spray or drizzle them with olive oil for extra crispiness.
- Bake in preheated oven for about 15-20 minutes, or until golden brown and cooked through (internal temperature should reach at least 165°F /75°C).
- Let cool slightly before serving with your favorite dipping sauces like ranch dressing or honey mustard.
