Ingredients:

  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (panko or regular)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 2 large eggs
  • Cooking spray or olive oil (for greasing)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a mixing bowl, season the chicken pieces with garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  3. In another bowl, combine breadcrumbs, grated Parmesan cheese, and dried Italian herbs.
  4. In a separate shallow dish, beat the eggs until fully combined.
  5. Dip each piece of seasoned chicken into the egg wash. Next, roll it in the breadcrumb mixture until fully covered. Place coated chicken bites on the prepared baking sheet.
  6. Spray the top of the chicken bites lightly with cooking spray or drizzle them with olive oil for extra crispiness.
  7. Bake in preheated oven for about 15-20 minutes, or until golden brown and cooked through (internal temperature should reach at least 165°F /75°C).
  8. Let cool slightly before serving with your favorite dipping sauces like ranch dressing or honey mustard.
