Ingredients:

  • 2 cups all-purpose flour (or whole wheat flour)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup water
  • 3 tbsp olive oil (or avocado oil)
  • 2 cups cooked chicken, shredded (rotisserie chicken or grilled chicken breast)
  • 1 cup mozzarella cheese, shredded (or dairy-free cheese alternative)
  • 1/2 cup bacon bits (turkey bacon or plant-based bacon)
  • Fresh spinach leaves (kale or Swiss chard can be used as substitutes)
  • Italian seasoning to taste
  • Garlic powder to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, baking powder, and salt. Gradually add in water and olive oil until a dough forms. Knead for about five minutes until smooth.
  3. On a floured surface, roll out the dough into a rectangle shape.
  4. In a separate bowl, combine shredded chicken, mozzarella cheese alternative, turkey bacon bits, fresh spinach leaves, Italian seasoning, and garlic powder; mix well.
  5. Spoon filling onto one side of the rolled-out dough. Fold over the other half and seal edges by pressing down firmly.
  6. Place on a baking sheet lined with parchment paper and bake in preheated oven for about 20-25 minutes or until golden brown.
  7. Allow to cool slightly before slicing into pieces; serve warm.
