Ingredients:
- 2 cups all-purpose flour (or whole wheat flour)
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup water
- 3 tbsp olive oil (or avocado oil)
- 2 cups cooked chicken, shredded (rotisserie chicken or grilled chicken breast)
- 1 cup mozzarella cheese, shredded (or dairy-free cheese alternative)
- 1/2 cup bacon bits (turkey bacon or plant-based bacon)
- Fresh spinach leaves (kale or Swiss chard can be used as substitutes)
- Italian seasoning to taste
- Garlic powder to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the flour, baking powder, and salt. Gradually add in water and olive oil until a dough forms. Knead for about five minutes until smooth.
- On a floured surface, roll out the dough into a rectangle shape.
- In a separate bowl, combine shredded chicken, mozzarella cheese alternative, turkey bacon bits, fresh spinach leaves, Italian seasoning, and garlic powder; mix well.
- Spoon filling onto one side of the rolled-out dough. Fold over the other half and seal edges by pressing down firmly.
- Place on a baking sheet lined with parchment paper and bake in preheated oven for about 20-25 minutes or until golden brown.
- Allow to cool slightly before slicing into pieces; serve warm.
