Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon bits (about 4 strips of bacon)
  • Chopped green onions or chives for garnish
  • Extra shredded cheddar cheese (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the Baking Dish: Grease a large baking dish with cooking spray or olive oil.
  3. Arrange Chicken in Dish: Place the chicken breasts in the prepared baking dish.
  4. Add Seasoning and Cream Cheese: Sprinkle the ranch seasoning evenly over the chicken. Then add dollops of softened cream cheese on top of the seasoned chicken.
  5. Bake: Cover the baking dish with aluminum foil and bake in preheated oven for 25 minutes. Remove foil and bake for an additional 15 minutes, or until chicken is fully cooked (internal temperature should reach at least 165°F/74°C) and juices run clear.
  6. Add Cheddar Cheese and Bacon Bits: Remove from oven; sprinkle shredded cheddar cheese and cooked bacon bits over the top. Return to oven uncovered for another 5 minutes, allowing the cheese to melt.
  7. Serve: Garnish with chopped green onions or chives before serving warm over rice, pasta, or salad greens if desired!
