Ingredients:
- 4 large eggs
- 1 cup cottage cheese (preferably low-fat)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup chopped spinach (fresh or frozen, thawed)
- 1/4 cup diced bell pepper (red or green)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Fresh herbs for garnish (optional: chives, parsley)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs until well beaten. Stir in the cottage cheese, shredded cheese, chopped spinach, diced bell pepper, garlic powder, salt, and pepper until everything is evenly combined.
- Pour the egg mixture into an oven-safe baking dish or divide it equally among individual ramekins.
- Place in the preheated oven and bake for 25–30 minutes or until the eggs are set in the center and lightly golden on top.
- Let cool slightly before serving. Garnish with fresh herbs if desired.
