Ingredients:

  • 1 cup unsalted butter, softened (227 g)
  • 1 cup granulated sugar (200 g)
  • 1 cup brown sugar, packed (220 g)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour (360 g)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened (113 g)
  •  2 cups powdered sugar (240 g)
  •  2 tablespoons milk or heavy cream
  •  1 teaspoon vanilla extract
  • Christmas-themed sprinkles, approximately ¼ cup (50 g)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper leaving an overhang for easy removal later.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer on medium speed—about 3–4 minutes.
  3. Add in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients until just combined—do not overmix!
  6. Gently fold in about half of your Christmas sprinkles into the cookie dough for festive color throughout.
  7. Spread the cookie dough evenly into your prepared baking pan using a spatula or your hands to press it down gently.
  8. Bake in preheated oven for about 20–25 minutes or until golden around edges but still soft in center—do not overbake! A toothpick inserted should come out clean but moist crumbs are acceptable.
  9. Allow them to cool completely in the pan on a wire rack before frosting—about 30 minutes will do nicely!
  10. While cookies are cooling prepare frosting by beating together softened butter with powdered sugar until creamy and smooth; mix in milk/cream and vanilla extract till desired consistency is reached.
  11. Once cooled completely spread frosting evenly across baked cookie base using an offset spatula.
  12. Sprinkle remaining Christmas sprinkles generously on top of frosted cookies.
  13. Once decorated let sit for another few moments before cutting into squares/bars using a sharp knife or pizza cutter.
