Ingredients:
- 2 cups ricotta cheese (part-skim or fat-free)
- 1 cup spinach (fresh or frozen, chopped)
- 1/2 cup shredded mozzarella cheese (low-fat)
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9x9-inch baking dish with cooking spray or olive oil.
- In a large mixing bowl, combine the ricotta cheese, spinach, mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt and pepper. If using Italian seasoning, add it here as well.
- Mix all ingredients until they are well combined and smooth.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Place in the preheated oven and bake for about 30–35 minutes or until set in the center and lightly golden on top.
- Remove from oven and let it cool for about 5–10 minutes before slicing into squares.
- Serve warm as a main dish or side option!
