Ingredients:

  • 2 cups ricotta cheese (part-skim or fat-free)
  • 1 cup spinach (fresh or frozen, chopped)
  • 1/2 cup shredded mozzarella cheese (low-fat)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x9-inch baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine the ricotta cheese, spinach, mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt and pepper. If using Italian seasoning, add it here as well.
  4. Mix all ingredients until they are well combined and smooth.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Place in the preheated oven and bake for about 30–35 minutes or until set in the center and lightly golden on top.
  7. Remove from oven and let it cool for about 5–10 minutes before slicing into squares.
  8. Serve warm as a main dish or side option!
