Instructions:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, use an electric mixer to cream together the softened butter, stevia in the raw, and brown sugar until light and fluffy. This should take about 3–5 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt until well blended.
- Gradually add the dry ingredients to your wet mixture while mixing on low speed until just combined—be careful not to overmix.
- Gently fold in the chocolate chips by hand using a spatula or wooden spoon until they are evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheets about two inches apart.
- Bake in preheated oven for ten to twelve minutes or until edges are lightly golden but centers are still soft—this will ensure chewy cookies after cooling!
- Remove from oven and let cool on baking sheets for about five minutes before transferring them to wire racks to cool completely.
