Ingredients:

  • 6 large flour tortillas (10-inch size)
  • 6 large eggs
  • 1 cup milk (whole or low-fat)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup diced vegetables (bell peppers, onions, spinach, or zucchini)
  • (optional for meat lovers) 1/2 pound cooked ham or cooked sausage, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • (optional) Fresh herbs for garnish (parsley or chives)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
  3. Layer the Tortillas: Place one tortilla at the bottom of the prepared baking dish. You may need to cut some tortillas into quarters to cover any gaps in the corners.
  4. Prepare the Filling: In a large mixing bowl, whisk together the eggs and milk until well combined. Add garlic powder, onion powder, salt, and pepper; mix thoroughly.
  5. Add Cheese and Vegetables: Stir in half of the shredded cheese along with your choice of diced vegetables and meat (if using) into the egg mixture.
  6. Assemble Layers: Pour half of the egg mixture over the first tortilla layer in your baking dish. Repeat this process by adding another tortilla on top followed by more egg mixture until you have used all ingredients—aiming for approximately three layers of tortillas with filling between each layer.
  7. Finish with Cheese: On top of your final layer of tortillas
  8. Bake in Oven: Cover loosely with foil and bake in preheated oven for about 25 minutes covered; then remove foil and bake an additional 10–15 minutes until set and golden on top.
  9. Cool & Serve: Remove from oven once done; let cool for about5–10 minutes before slicing into squares for serving.
