Ingredients:

  • 6 large flour or corn tortillas
  • 1 tablespoon olive oil (for greasing)
  • 6 large eggs
  • 1 cup milk (or cream)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 cup diced vegetables (bell peppers, onions, spinach, etc.)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • (Optional) Cooked bacon or sausage (about 1 cup)
  • (Optional) Fresh herbs (such as cilantro or parsley), chopped

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish with olive oil.
  3. Place two tortillas at the bottom of the dish. You may need to tear one tortilla slightly to fit them all in nicely.
  4. In a large bowl, whisk together: Eggs, Milk, Garlic powder, Onion powder, Salt and pepper. Add in half of the shredded cheese and mix well.
  5. Stir in your chosen diced vegetables and any optional add-ins like cooked bacon or sausage into the egg mixture.
  6. Pour half of the egg mixture over the tortillas in your baking dish. Repeat layering with two more tortillas followed by another layer of egg mixture. Top with remaining tortillas and pour any leftover egg mixture on top.
  7. Sprinkle remaining shredded cheese evenly over everything.
  8. Cover with aluminum foil and bake in preheated oven for about 25 minutes. Remove foil and continue baking for an additional 15 minutes, until set in center and golden brown on top.
  9. Allow to cool for about 5–10 minutes before slicing into squares. Garnish with fresh herbs if desired!
