Ingredients:
- 9 small to medium yellow onions
- 1/4 cup olive oil
- 2 tablespoons unsalted butter, thinly sliced
- Coarse sea salt
- Fresh cracked black pepper
- Fresh rosemary sprigs
Instructions:
- Preheat your oven to 375°F (190°C) and place a rack in the upper third.
- (Optional) Cut the tops off each onion, leaving most of the skins intact.
- Arrange the onions in a square baking dish or on a rimmed sheet pan.
- Drizzle the olive oil over each onion
- Place a thin pat of butter on top of each onion.
- Generously sprinkle with coarse sea salt and fresh cracked black pepper, then top with fresh rosemary sprigs.
- Bake for about 25 minutes, until bubbling and tender.
- Increase the oven temperature to 400°F (200°C) and continue baking for an additional 15 to 20 minutes, or until the onions are completely tender and their tops are nicely browned.
