Ingredients:

  • 9 small to medium yellow onions
  • 1/4 cup olive oil
  • 2 tablespoons unsalted butter, thinly sliced
  • Coarse sea salt
  • Fresh cracked black pepper
  • Fresh rosemary sprigs

Instructions:

  1. Preheat your oven to 375°F (190°C) and place a rack in the upper third.
  2. (Optional) Cut the tops off each onion, leaving most of the skins intact.
  3. Arrange the onions in a square baking dish or on a rimmed sheet pan.
  4. Drizzle the olive oil over each onion
  5. Place a thin pat of butter on top of each onion.
  6. Generously sprinkle with coarse sea salt and fresh cracked black pepper, then top with fresh rosemary sprigs.
  7. Bake for about 25 minutes, until bubbling and tender.
  8. Increase the oven temperature to 400°F (200°C) and continue baking for an additional 15 to 20 minutes, or until the onions are completely tender and their tops are nicely browned.
