Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole milk (room temperature)
  • 3 large eggs (room temperature)
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 tablespoons unsalted butter (melted, for brushing)

Instructions:

  1. Preheat your oven to 425°F (220°C). Place your popover pan in the oven to heat while you prepare the batter.
  2. In a mixing bowl, whisk together flour, milk, eggs, and salt until smooth and well combined. Stir in the melted butter until just incorporated. Avoid overmixing; some small lumps are okay.
  3. Carefully remove the hot popover pan from the oven and spray it with non-stick cooking spray or brush it with additional melted butter to prevent sticking.
  4. Pour batter into each cup of the hot popover pan, filling them about halfway full to allow room for rising.
  5. Bake in preheated oven for about 20 minutes
  6. While popovers bake, mix together granulated sugar and ground cinnamon in a small bowl.
  7. Once baked, remove popovers from oven. Brush each one generously with melted butter, then roll them in cinnamon sugar mixture until fully coated.
