Ingredients:

  • 1 pound Italian sausage (sweet or hot based on preference)
  • 2 tablespoons olive oil
  • 1 medium onion, sliced (about 1 cup)
  • 2 bell peppers, sliced (any color, about 2 cups total; red, yellow, or green)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ¼ cup chicken broth or white wine (optional for added flavor)
  • Fresh parsley, chopped for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced onions and bell peppers. Drizzle with olive oil, then add the minced garlic, oregano, basil, crushed red pepper flakes (if using), salt, and black pepper. Toss everything together until the vegetables are well coated.
  3. Spread the vegetable mixture evenly in a large baking dish.
  4. Nestle the Italian sausages among the vegetables in the baking dish. If you prefer your sausages browned more quickly, you can prick them lightly with a fork to allow steam to escape.
  5. Pour chicken broth or white wine over the sausages and vegetables if using—this will help keep everything moist during cooking.
  6. Cover the baking dish tightly with aluminum foil.
  7. Bake in preheated oven for about 20 minutes covered; this allows steam to cook through the sausages while keeping them juicy.
  8. After 20 minutes remove the foil and continue to bake for an additional 10–15 minutes until sausages are browned and cooked through (internal temperature should reach at least 160°F/70°C) and veggies are tender.
  9. Once done, remove from oven and let sit for a few minutes before serving garnished with fresh parsley if desired.
