- 2 tablespoons olive oil (or melted coconut oil)
- 1 teaspoon ground cinnamon
- 2 tablespoons honey (or maple syrup for a vegan option)
- Pinch of salt
- Optional toppings: Chopped nuts (e.g., walnuts or pecans), shredded coconut, or yogurt.
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Plantains: Peel the plantains by cutting off both ends and making a shallow slit along the length of each plantain. Carefully remove the peel. Slice each plantain diagonally into about ½-inch thick pieces.
- Coat the Plantains: In a large mixing bowl, toss the sliced plantains with olive oil, ensuring they are evenly coated. Add ground cinnamon and a pinch of salt to enhance flavor; toss again until well combined.
- Arrange on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread out the coated plantain slices in a single layer on the prepared baking sheet to ensure even cooking.
- Bake: Place in preheated oven and bake for about 15 minutes.
- Drizzle Honey: After 15 minutes, remove from oven and drizzle honey over baked plantains. Flip them gently using tongs or a spatula to ensure all sides get caramelized nicely.
