Ingredients:
- 1.5 lbs salmon fillet (center-cut preferred)
- 1 tsp kosher salt
- 0.5 tsp coarse black pepper
- 1 large lemon, half sliced into rounds and half juiced
- 3 tbsp unsalted butter, melted
- 1 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- 1 tbsp honey
- 2 tbsp fresh parsley or dill, chopped
Instructions:
- Preheat your oven to 200°C (400°F). Lay out a piece of heavy-duty foil twice the size of your salmon on a large rimmed baking sheet.
- Place lemon slices in a row in the center of the foil to act as a trivet. Pat the salmon bone-dry with paper towels and place it on top of the lemon slices.
- In a small mixing bowl, whisk together the melted butter, olive oil, honey, minced garlic, and lemon juice until fully emulsified.
- Fold up the edges of the foil to create a boat. Season the salmon with salt and pepper, then pour the garlic-butter glaze evenly over the fish.
- Fold the foil over the salmon and crimp the edges tightly to create a sealed pouch. Bake for 15 minutes, then broil for 3 minutes depending on thickness, or until the internal temperature reaches 63°C.
- Optional: Open the foil and broil for the final 3 minutes to caramelize the honey glaze.
