Ingredients:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar, packed
- 1/4 tsp ground cinnamon
- 3 tbsp cold unsalted butter, cubed
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 1 large egg, room temperature
- 3/4 cup buttermilk, room temperature
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 2 cups peeled and diced Granny Smith apples
Instructions:
- Preheat oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
- Toss diced apples with 1 tablespoon of the measured flour until lightly coated.
- In a medium bowl, combine 1/2 cup flour, brown sugar, and 1/4 tsp cinnamon. Use a fork or pastry cutter to work cold butter into the mixture until coarse crumbs form. Set aside in the fridge.
- In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, baking soda, 1 tbsp cinnamon, and salt.
- In a separate bowl, whisk together egg, buttermilk, oil, and vanilla extract until emulsified.
- Pour wet ingredients into dry ingredients and fold gently with a spatula until just combined.
- Gently fold in the floured apple chunks.
- Fill each muffin cup to the top, mounding slightly, and sprinkle a generous tablespoon of streusel over each.
- Bake at 425°F (220°C) for 5 minutes, then lower oven temperature to 375°F (190°C) without opening the door and bake for another 15 minutes.
