Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1/2 cup (100g) granulated white sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 cup (60g) finely crushed graham crackers
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (120g) mini marshmallows
  • 4 oz (113g) milk chocolate bar, chopped into chunks
  • 1/2 cup (60g) mini marshmallows

Instructions:

  1. Cream together the softened butter, brown sugar, and white sugar using your mixer on medium-high until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully incorporated and velvety.
  2. In a separate bowl, whisk the flour, graham cracker crumbs, baking soda, and salt. Gradually add the dry ingredients to the wet mixture on low speed.
  3. Once just combined, fold in the semi-sweet chocolate chips and the first cup of mini marshmallows.
  4. Scoop rounded tablespoons of dough onto parchment-lined sheets. Bake at 350°F (175°C) for 8 minutes.
  5. Quickly remove the tray and press 2-3 chocolate chunks and a few mini marshmallows into the center of each cookie. Return to the oven for another 2-3 minutes until the marshmallows are puffed and mahogany-colored.
