Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1/2 cup (100g) granulated white sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1/2 cup (60g) finely crushed graham crackers
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (170g) semi-sweet chocolate chips
- 1 cup (120g) mini marshmallows
- 4 oz (113g) milk chocolate bar, chopped into chunks
- 1/2 cup (60g) mini marshmallows
Instructions:
- Cream together the softened butter, brown sugar, and white sugar using your mixer on medium-high until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully incorporated and velvety.
- In a separate bowl, whisk the flour, graham cracker crumbs, baking soda, and salt. Gradually add the dry ingredients to the wet mixture on low speed.
- Once just combined, fold in the semi-sweet chocolate chips and the first cup of mini marshmallows.
- Scoop rounded tablespoons of dough onto parchment-lined sheets. Bake at 350°F (175°C) for 8 minutes.
- Quickly remove the tray and press 2-3 chocolate chunks and a few mini marshmallows into the center of each cookie. Return to the oven for another 2-3 minutes until the marshmallows are puffed and mahogany-colored.
