Ingredients:
- 1 and 1/2 pounds skinless, boneless chicken breasts or tenders
- 1/2 cup whole wheat flour or all-purpose flour (spooned & leveled)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 large eggs
- 1 and 1/2 cups finely crushed pretzels (or more, as needed)
- Nonstick spray (like PAM, olive oil spray, or coconut oil spray)
Instructions:
- Preheat the oven to 400°F (204°C). Line a large baking sheet with a silicone baking mat or coat heavily with nonstick spray.
- If using chicken breasts, pound them down and cut into small pieces (about 1-1.5 inches). If using boneless skinless chicken tenders, simply cut them into similar-sized pieces.
- In a shallow dish, combine the flour, salt, and pepper.
- Beat the eggs in another shallow dish.
- Pour finely crushed pretzels into a third shallow dish.
- Coat each piece of chicken in flour; shake off any excess.
- Dip the floured chicken in egg and let any excess drip off before rolling generously in crushed pretzels; shake off any extra crumbs.
- Place the coated chicken bites onto your prepared baking sheet.
- Lightly spray each piece with nonstick spray to help seal the breading for an even bake.
- Bake for about 8 minutes, then turn each piece over and continue baking until golden brown and cooked through—approximately another 6–8 minutes more (baking times may vary based on size).
