Ingredients:

  • 1 and 1/2 pounds skinless, boneless chicken breasts or tenders
  • 1/2 cup whole wheat flour or all-purpose flour (spooned & leveled)
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 large eggs
  • 1 and 1/2 cups finely crushed pretzels (or more, as needed)
  • Nonstick spray (like PAM, olive oil spray, or coconut oil spray)

Instructions:

  1. Preheat the oven to 400°F (204°C). Line a large baking sheet with a silicone baking mat or coat heavily with nonstick spray.
  2. If using chicken breasts, pound them down and cut into small pieces (about 1-1.5 inches). If using boneless skinless chicken tenders, simply cut them into similar-sized pieces.
  3. In a shallow dish, combine the flour, salt, and pepper.
  4. Beat the eggs in another shallow dish.
  5. Pour finely crushed pretzels into a third shallow dish.
  6. Coat each piece of chicken in flour; shake off any excess.
  7. Dip the floured chicken in egg and let any excess drip off before rolling generously in crushed pretzels; shake off any extra crumbs.
  8. Place the coated chicken bites onto your prepared baking sheet.
  9. Lightly spray each piece with nonstick spray to help seal the breading for an even bake.
  10. Bake for about 8 minutes, then turn each piece over and continue baking until golden brown and cooked through—approximately another 6–8 minutes more (baking times may vary based on size).
