Ingredients:
- 1 cup chunky or smooth peanut butter
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon baking soda
- About 6 slices of bacon, cooked, cooled, and coarsely chopped
- A large handful of dark chocolate pieces
- Granulated sugar for rolling cookies
Instructions:
- Preheat your oven to 375°F (190°C). Place a rack in the upper third of the oven. Line a rimmed baking sheet with foil and lay uncooked bacon slices on top in a single layer. Bake for 12-15 minutes, or until cooked through, browned, and crisp. Remove from oven and transfer bacon to a plate to cool before chopping into small pieces.
- Lower the oven temperature to 350°F (175°C). Line cookie sheets with parchment paper; set aside. In a medium bowl, combine peanut butter, brown sugar, and granulated sugar until well mixed. Add in the egg and baking soda; mix thoroughly until combined. Gently fold in chopped bacon and dark chocolate pieces.
- Roll dough into balls about the size of walnuts (approximately 1 inch). If desired, roll each ball in granulated sugar before placing them on the prepared cookie sheet. Use a fork to create a criss-cross pattern on top of each cookie.
- Bake cookies for approximately 10 minutes, or until lightly browned around the edges. Allow cookies to cool on the baking sheet for about five minutes before transferring them to wire racks or directly enjoying!
