Ingredients:

  • 2 boneless, skinless chicken breasts (about 6-8 ounces/ 170-230g each)
  • 2 tablespoons olive oil (30ml)
  • 1/2 cup balsamic vinegar (120ml)
  • Salt and freshly ground black pepper to taste (Approximately 1/4 teaspoon each)

Instructions:

  1. Pat chicken breasts dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place the chicken breasts in the skillet. Sear for 5-7 minutes per side, until golden brown and cooked through.
  3. Reduce heat to medium-low. Pour balsamic vinegar into the skillet. Let it simmer for 8-10 minutes, or until the vinegar has reduced by about half and has thickened into a glaze.
  4. Spoon the balsamic glaze over the chicken breasts, ensuring they are well coated. Let the chicken simmer in the glaze for another 1-2 minutes.
  5. Remove the chicken from the skillet and serve immediately.
