Ingredients:
- 2 boneless, skinless chicken breasts (about 6-8 ounces/ 170-230g each)
- 2 tablespoons olive oil (30ml)
- 1/2 cup balsamic vinegar (120ml)
- Salt and freshly ground black pepper to taste (Approximately 1/4 teaspoon each)
Instructions:
- Pat chicken breasts dry with paper towels. Season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place the chicken breasts in the skillet. Sear for 5-7 minutes per side, until golden brown and cooked through.
- Reduce heat to medium-low. Pour balsamic vinegar into the skillet. Let it simmer for 8-10 minutes, or until the vinegar has reduced by about half and has thickened into a glaze.
- Spoon the balsamic glaze over the chicken breasts, ensuring they are well coated. Let the chicken simmer in the glaze for another 1-2 minutes.
- Remove the chicken from the skillet and serve immediately.
