Ingredients:
- 1/4 cup (60 ml) good quality balsamic vinegar
- 1/2 cup (120 ml) extra virgin olive oil
- 1 tablespoon (15 ml) Dijon mustard
- 1 tablespoon (15 ml) honey or maple syrup (for vegan option)
- 1 clove garlic, minced (about 1 teaspoon)
- 1/4 teaspoon dried Italian herbs (or a pinch each of dried oregano, basil, and thyme)
- Salt and freshly ground black pepper to taste
- Optional: 1 tablespoon finely chopped shallot
Instructions:
- Mince the garlic (and shallot, if using) finely.
- In a mixing bowl, whisk together the balsamic vinegar, Dijon mustard, honey (or maple syrup), and minced garlic (and shallot if using). If the honey is stiff, gently warm it in a small saucepan and let cool slightly.
- Slowly drizzle in the olive oil while whisking constantly until the dressing is emulsified and slightly thickened.
- Stir in the dried Italian herbs. Season with salt and pepper to taste.
- Taste the dressing and adjust the seasonings as needed. Add more honey for sweetness, balsamic vinegar for tang, or salt and pepper to taste.
- For best results, cover and refrigerate the dressing for at least 15-30 minutes to allow the flavors to meld.
- Drizzle over your favorite salad and enjoy!
