Ingredients:

  • 1/4 cup (60 ml) good quality balsamic vinegar
  • 1/2 cup (120 ml) extra virgin olive oil
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 tablespoon (15 ml) honey or maple syrup (for vegan option)
  • 1 clove garlic, minced (about 1 teaspoon)
  • 1/4 teaspoon dried Italian herbs (or a pinch each of dried oregano, basil, and thyme)
  • Salt and freshly ground black pepper to taste
  • Optional: 1 tablespoon finely chopped shallot

Instructions:

  1. Mince the garlic (and shallot, if using) finely.
  2. In a mixing bowl, whisk together the balsamic vinegar, Dijon mustard, honey (or maple syrup), and minced garlic (and shallot if using). If the honey is stiff, gently warm it in a small saucepan and let cool slightly.
  3. Slowly drizzle in the olive oil while whisking constantly until the dressing is emulsified and slightly thickened.
  4. Stir in the dried Italian herbs. Season with salt and pepper to taste.
  5. Taste the dressing and adjust the seasonings as needed. Add more honey for sweetness, balsamic vinegar for tang, or salt and pepper to taste.
  6. For best results, cover and refrigerate the dressing for at least 15-30 minutes to allow the flavors to meld.
  7. Drizzle over your favorite salad and enjoy!
