Ingredients:
- 2 lbs chicken wings, flats and drumettes separated
- 1 tbsp neutral oil
- 1 tbsp aluminum-free baking powder
- 1 tsp kosher salt
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/2 cup BBQ sauce
- 2 tbsp honey
- 1 tsp apple cider vinegar
Instructions:
- Pat the chicken wings with paper towels until bone-dry to ensure maximum crispiness.
- In a large bowl, toss the wings with the neutral oil and baking powder until evenly coated.
- Whisk together the salt, smoked paprika, garlic powder, onion powder, and black pepper. Sprinkle over the wings and toss vigorously to coat every crevice.
- Arrange the wings in a single layer in the air fryer basket. Cook at 400°F (200°C) for 15 minutes, flipping the wings halfway through to ensure even fat rendering.
- While wings cook, whisk together the BBQ sauce, honey, and apple cider vinegar in a small bowl.
- Check the wings after 15 minutes; they should be golden and making a distinct 'clinking' sound when moved.
- Increase the time by 5 minutes until the skin is visibly bubbly and dark gold.
- Brush the glaze onto the wings or toss them in the sauce bowl, then return to the air fryer for the final 2 minutes of cooking to caramelize the sugars.
