Ingredients:

  • 2 lbs chicken wings, flats and drumettes separated
  • 1 tbsp neutral oil
  • 1 tbsp aluminum-free baking powder
  • 1 tsp kosher salt
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 1 tsp apple cider vinegar

Instructions:

  1. Pat the chicken wings with paper towels until bone-dry to ensure maximum crispiness.
  2. In a large bowl, toss the wings with the neutral oil and baking powder until evenly coated.
  3. Whisk together the salt, smoked paprika, garlic powder, onion powder, and black pepper. Sprinkle over the wings and toss vigorously to coat every crevice.
  4. Arrange the wings in a single layer in the air fryer basket. Cook at 400°F (200°C) for 15 minutes, flipping the wings halfway through to ensure even fat rendering.
  5. While wings cook, whisk together the BBQ sauce, honey, and apple cider vinegar in a small bowl.
  6. Check the wings after 15 minutes; they should be golden and making a distinct 'clinking' sound when moved.
  7. Increase the time by 5 minutes until the skin is visibly bubbly and dark gold.
  8. Brush the glaze onto the wings or toss them in the sauce bowl, then return to the air fryer for the final 2 minutes of cooking to caramelize the sugars.
