Ingredients:
- Fresh mixed berries (strawberries, blueberries, raspberries, blackberries): 2 cups (approximately 300g)
- Granulated sugar: 2 tablespoons (25g)
- Lemon juice: 1 teaspoon (5ml)
- Plain Greek yogurt (full-fat or low-fat): 2 cups (approximately 500g)
- Honey or maple syrup: 2 tablespoons (30ml)
- Vanilla extract: ½ teaspoon (2.5ml)
- Granola (any flavor): ½ cup (approximately 50g)
Instructions:
- Combine berries, sugar, and lemon juice in a small saucepan. Cook over medium heat until berries soften and release their juices, about 5-7 minutes. Cool slightly.
- In a mixing bowl, whisk together Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Layer the berry compote, yogurt mixture, and granola (if using) in the popsicle molds. Alternate layers for a visually appealing swirl.
- Insert popsicle sticks into the molds and freeze for at least 4-6 hours, or preferably overnight, until completely solid.
- To unmold the popsicles, run the molds under warm water for a few seconds. Gently pull on the popsicle sticks to release the popsicles. Serve immediately.
