Ingredients:

  • 1 cup (225g) high-quality mayonnaise
  • 1/2 cup (135g) tomato ketchup
  • 1 tbsp (15ml) dill pickle juice
  • 1 tsp (5ml) Worcestershire sauce
  • 1/2 tsp (2.5g) smoked paprika
  • 1/4 tsp (1.25g) garlic powder
  • 1/4 tsp (1.25g) onion powder
  • 1 pinch cayenne pepper

Instructions:

  1. Place 1 cup (225g) high-quality mayonnaise into your chilled mixing bowl. Note: Starting with mayo allows you to fold other ingredients in without breaking the emulsion.
  2. Pour in 1/2 cup (135g) tomato ketchup.
  3. Measure out 1 tbsp (15ml) dill pickle juice and whisk it into the mixture until no streaks remain.
  4. Add 1 tsp (5ml) Worcestershire sauce and 1/2 tsp (2.5g) smoked paprika. Note: This is where the sauce turns from pink to a rich, sunset orange.
  5. Sprinkle in 1/4 tsp (1.25g) garlic powder and 1/4 tsp (1.25g) onion powder.
  6. Toss in a pinch of cayenne pepper.
  7. Whisk vigorously for 30 seconds until the texture looks silky and glossy.
  8. Cover the bowl and refrigerate for at least 30 minutes. Note: This allows the dry spices to hydrate and the flavors to marry.
