Ingredients:
- 1 1/2 cups (190g) whole wheat flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) ground cinnamon
- 1/4 teaspoon (1.5g) ground nutmeg
- 1/4 teaspoon (1.5g) salt
- 1/2 cup (1 stick, 113g) unsalted butter, melted and cooled slightly
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 3 very ripe bananas, mashed (about 1 1/2 cups)
- 1/2 cup (60g) chopped walnuts or pecans (optional)
- 1/2 cup (85g) chocolate chips (dark chocolate for extra health points!) (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Fold in the walnuts/pecans and chocolate chips (if using).
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out with just a few moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
