Ingredients:

  • 1 lb (450g) ground beef (80/20 blend recommended)
  • 1 medium yellow onion, finely chopped (approx. 1 cup / 150g)
  • 1 teaspoon garlic powder (5ml)
  • 1 teaspoon onion powder (5ml)
  • 1/2 teaspoon smoked paprika (2.5ml)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup (60ml) ketchup
  • 2 tablespoons (30ml) yellow mustard
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 cup (240ml) mayonnaise
  • 2 tablespoons (30ml) sweet pickle relish
  • 2 tablespoons (30ml) yellow mustard
  • 1 tablespoon (15ml) white vinegar
  • 1 teaspoon garlic powder (5ml)
  • 1 teaspoon onion powder (5ml)
  • 1/2 teaspoon smoked paprika (2.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/4 teaspoon freshly ground black pepper (1.25ml)
  • 28-32 oz (795-907g) frozen tater tots
  • 8 oz (225g) shredded cheddar cheese
  • 4 oz (115g) shredded Monterey Jack cheese
  • 1/2 cup (115g) dill pickle slices, diced
  • 2 tablespoons (30ml) sesame seeds

Instructions:

  1. Preheat oven to 400°F (200°C). Grease a 9x13 inch baking dish.
  2. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  3. Add the chopped onion and cook until softened. Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 1 minute.
  4. Stir in the ketchup, mustard, and Worcestershire sauce. Simmer for 5 minutes, allowing the flavors to meld.
  5. In a medium bowl, whisk together the mayonnaise, sweet pickle relish, mustard, white vinegar, garlic powder, onion powder, paprika, salt, and pepper.
  6. Spread the cooked ground beef mixture evenly in the prepared baking dish.
  7. Spread about 3/4 of the special sauce evenly over the ground beef. Reserve the rest for serving.
  8. Sprinkle with half of the shredded cheddar and Monterey Jack cheeses.
  9. Arrange the frozen tater tots in a single layer over the cheese.
  10. Bake in the preheated oven for 25 minutes, or until the tater tots are golden brown and crispy.
  11. Remove from oven and sprinkle with the remaining cheddar and Monterey Jack cheeses.
  12. If desired, broil for 1-2 minutes, watching carefully, until the cheese is melted and bubbly.
  13. Remove from oven and let cool slightly. Sprinkle with diced pickles and sesame seeds. Serve hot with the reserved special sauce on the side.
