Ingredients:
- 1 cup (226g) unsalted butter, melted
- 1 cup (200g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (135g) Biscoff spread
- 1/2 cup (90g) white chocolate chips, plus extra for topping
Instructions:
- Preheat your oven to 350°F (175°C). Grease and line the baking pan with parchment paper for easy removal.
- In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Beat in the eggs, one at a time, then add the vanilla extract and Biscoff spread until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in white chocolate chips gently.
- Pour the blondie batter into the prepared pan, smoothing the top.
- Drop spoonfuls of Biscoff spread on top of the batter and use a knife to swirl through the mixture lightly.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted comes out with a few moist crumbs.
- Allow the blondies to cool in the pan for at least 15 minutes before cutting into squares.
