Ingredients:

  • 1 cup (226g) unsalted butter, melted
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (135g) Biscoff spread
  • 1/2 cup (90g) white chocolate chips, plus extra for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line the baking pan with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Beat in the eggs, one at a time, then add the vanilla extract and Biscoff spread until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Fold in white chocolate chips gently.
  5. Pour the blondie batter into the prepared pan, smoothing the top.
  6. Drop spoonfuls of Biscoff spread on top of the batter and use a knife to swirl through the mixture lightly.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted comes out with a few moist crumbs.
  8. Allow the blondies to cool in the pan for at least 15 minutes before cutting into squares.
