Ingredients:
- 1 cup (150g) cherry tomatoes
- 1 cup (160g) mozzarella pearls
- 12 large fresh basil leaves
- 1/4 cup (60ml) balsamic glaze
- 1 tbsp (15ml) extra virgin olive oil
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
Instructions:
- Wash the cherry tomatoes and pat them completely dry with paper towels. Gently rinse basil leaves and spin dry.
- Insert the skewer through the thickest part of a cherry tomato first to act as the anchor.
- Fold a basil leaf in half and slide it onto the skewer.
- Pierce a mozzarella pearl and push it firmly against the basil to lock everything in place.
- Arrange the skewers on a platter and drizzle the extra virgin olive oil evenly over the tops to create a barrier.
- Apply the balsamic glaze in a zig-zag motion across the skewers.
- Sprinkle with sea salt and cracked black pepper for a final punch of seasoning.
