Ingredients:

  • 1 cup (150g) cherry tomatoes
  • 1 cup (160g) mozzarella pearls
  • 12 large fresh basil leaves
  • 1/4 cup (60ml) balsamic glaze
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Wash the cherry tomatoes and pat them completely dry with paper towels. Gently rinse basil leaves and spin dry.
  2. Insert the skewer through the thickest part of a cherry tomato first to act as the anchor.
  3. Fold a basil leaf in half and slide it onto the skewer.
  4. Pierce a mozzarella pearl and push it firmly against the basil to lock everything in place.
  5. Arrange the skewers on a platter and drizzle the extra virgin olive oil evenly over the tops to create a barrier.
  6. Apply the balsamic glaze in a zig-zag motion across the skewers.
  7. Sprinkle with sea salt and cracked black pepper for a final punch of seasoning.
